Gnocchi Recipe
Emanuele was kind enough to send this recipe in for Gnocchi (home made pasta). This recipe should serve 4 people. Or perhaps 2 very hungry people! The Ingredients:
- 500 gr pezzuti flour
- 00 – 1,5 kg of potatoes
- 2 eggs
- 2 hand full of parmigiano�cheese
- Basil
- Annalisa peleed tomato
- Mandara buffalo mozzarella cheese 250g-la
- Corvina olive oil 200ml
Preparation:
For the gnocchi: cook the potatoes and let cool a bit. Peel and mash them. On a flatsurface form a fountain, and in the middle add flour and 2 eggs and mix all. The dough must be soft. Form the shape of the gnocchi in a small square. Place water and olive oil in a pot and when it is boiling, start to place the gnocchi in the water.
As they appear on the surface, collect them and place in a long plate and add some olive oil.
For the tomato sauce:
In a pan put olive oil, 2 gloves of garlic and basil, cookuntil golden. Add peeled tomato and salt and cook for 15/20 minutes. Add the gnocchiand the mozzarella cut into small pieces and turn gently for few minutes.
Before serving add 1 handfull of parmigiano cheese.

carissimo chef Emanuele, qui con tutte queste prelibatezze!!! viene voglia di leccare lo schermo de p.c. meno male che dal web non si sente il profumo dei tuoi suberbi gnocchi alla sorrentina.
1)versione parmigiana della nonna Pina.. che combinazione fatale!!! faceva la cuoca per le famiglie che se lo potevano permettere…
ok l’impasto fatto con patate vecchie che assorbono meno farina..
sugo: cipolla dorata +olio+basilico+carota+sedano+pelati passati
+una noce di burro crudo e abbondante Parmigiano-Reggiano stravecchio grattuggiato per mantecarli… soobh!! e io che sono a dieta ..siete dei criminali!!!
