Basbousa Homemade Recipe

Chef Amjad, Pastry Chef at the Sheraton Riyadh Hotel has sent in this great recipe for Basbousa (A Traditional Arabic Sweet). A Great dessert to share with the whole family at Iftar in Ramadan. There is also a great You Tube Video available where you can watch him prepare the dessert step by step.
Basbousa
Ingredients
- 600 g fine semolina flour
- 400 g white sugar
- 50 g ghee
- 1 1/2 tsp dry yeast
- peanuts
- 300 ml water
For sugar syrup
- 1 kg sugar
- 500 ml water
- 1 tbsp lemon juice
- 2 tbsp rose water
1. Semolina batter preparation
In a medium bowl, mix together the semolina flour, white sugar and add 1 1/2 tsp of yeast. Add ghee to the semolina mixture. Add water and mix it well until all the semolina flour are moistened. Set aside.
2.Sugar Syrup preparation
In a medium size pan pour 500 ml water and dissolved 1 kg of sugar over a medium-high heat.Bring to a boil then add 1 tablespoon of lemon juice and 2 tablespoon of rose water. Boil for 4 to 5 minutes.Remove from heat and set aside to cool to room temperature.
3.Baking preparation
Preheat the oven to 160 degrees centigrade. Grease the baking tray with ghee. Pour the the semolina batter and spread evenly half inch thick. Slice into square or diamond shape and place peanuts onto each piece.
Bake for 40 to 45 minutes in the preheated oven, or until golden brown. Remove from the oven, and pour the sugar syrup over the squares. Serve warm.
